Comfort Food

Nothing is better on a chilly, rainy day than your favorite comfort food. Today we're experiencing horrid weather. There's a hurricane pushing rain underneath us, and a nor'easter coming down on us. The one-two punch of these two monsters is keeping the wind blowing and the rain falling.

And so, in honor of this crap weather I thought sharing my favorite comfort food recipe was in order.

Baked Macaroni and Cheese
from Sheila Ferguson's Soul Food

2 large eggs, well beaten
2 tbs. salt
2 cups uncooked elbow or short macaroni
1/4 cup soft butter
2 - 2 1/2 cups evaporated milk
1 1/2 lb. extra sharp Cheddar cheese grated
paprika
cayenne pepper (optional)

Bring plenty of water to boil in a large saucepan over a high heat while you beat eggs. Add salt then add your macaroni slowly so that water never stops boiling. Boil for 12 minutes constantly stirring. Do not overcook and do not stop stirring as it helps to keep water from boiling over.

Meanwhile preheat your oven to 350F/180C/Gas 4.

After 12 minutes remove your macaroni from heat and drain. Pour a little cold water over drained macaroni in pot, swish it around then pour it off. Quickly stir in butter. Pour beaten eggs into evaporated milk.

Put a layer of macaroni into a buttered 2 quart casserole, then use a layer of grated cheese, a layer of macaroni, another layer of cheese until you use them all up ending up with a layer of cheese on top. Pour milk and egg mixture over all, forking it through evenly, and top with a healthy sprinkling of paprika. Bake in oven, uncovered, for 45 minutes or until brown and bubbilicious.

Here is my recipe for Mac 'n' Cheese:

Open (5) small packages of Stouffers Mac 'n' Cheese.
Line a pan with tin foil.
Dump the contents of the Stouffers into the pan.
Throw away all Stouffers packaging into outside trashcan.
Heat at 350 for about 30 minutes!

My favorite comfort food (outside of scrambled eggs and bacon) is fried chicken and mashed potatoes, no recipe necessary?!).

OK, I KNOW this cheating, but I DO live in NYC after all. My favorite comfort food is DELIVERED IN! I call up the Chinese place we love so much and order some Hot and Sour soup with noodles and chicken and shrimp. After that, I feel REALLY comfortable. Some day I'm going to have to learn how to cook!

Easiest comfort food: grilled cheese on toast. Easiest recipe based comfort food? Tuna pasta, come to sister site(www.eatmeblog.blogspot.com) for recipe and variations.

Spring is coming here so we're thinking salads and barbecues but enjoy your winter warming recipes. michele sent me today.

There is nothing like homemade mac and cheese. Eat it in front of a fire and voila~heaven. The weather sure has been crappy.
